I managed to access the FAQ page provided by the developers on their website through Google's Cache technology, because there was a question there that referred to this issue. The developers stated that you can zoom an image in both live and playback, but only on the web. There is a possibility this could apply to the Ezviz Studio as well, but as you can see it's only for the images. There is nothing mentioned about the video playback features.
I recommend checking the built-in Help section to see exactly what you can and can't do while using the video streaming mode. I know that for my security system I have to enable the Zoom first by pressing the zooming icon and then I can use the mouse wheel to zoom in or out.

We are using Ezviz Studio in China. But in Italy our Headquater can't see the images. If the Italian IT Manager opens all the doors, he will be able to see. But as you know, it is very dangerous to open all the doors. What ports we have to open?

It's necessary to open a port on your router for an application or service when you want to access it from outside or you want that application to communicate with other servers. If you are not instructed to open a port, then don't do it since you'll be opening a door for all the people.
You should always contact your supervision or IT Administrator to ask for advice when you want to do these operations.
Additionally, check the HELP documentation for the software to see what are the necessary ports that need to be opened.
